Yeast Recommendation for Baltic Porter (1.080 OG)

Thanks for the suggestions all! I've also had someone recommend WLP007... If anyone has experience with that as well. Gotcha. My projected brew day is at the end of this month, and I'd love to have it ready by Thanksgiving/Christmas time. I figured 3 months would be plenty of time at...

Yeast Recommendation for Baltic Porter (1.080 OG)

I'm designing a high gravity baltic porter @ 1.080 OG, and I'm having a tough time deciding on what yeast to use; I'd love some suggestions. I'd like something that's pretty clean, letting the malt and adjunct character shine through (planning on adding some molasses). At the same time, I'd...

    Converting A Keg

Be sure you check local laws and regulations before you do any modifications... Here in South Carolina kegs are highly regulated and tracked. "Acquiring" a keg can get you in a lot of trouble.

    Cool old bottle-capper

Haha, I still have an old ukulele of his I need to get restored... Luckily the capper doesn't need any work.

    Cool old bottle-capper

Got a picture of it? I'd love to see that.

    Cool old bottle-capper

It still has good movement, the spring has a lot of life in it! I'll definitely give it a go the next time I bottle.

    Cool old bottle-capper

Hey I got some new equipment! :P My grandfather was a big home-brewer, but I never realized it until I started up and my mom and aunt told me (he passed when I was about 3, I'm 34 now...). My aunt told me she still had his old bottle-capper if I wanted it. I have a great bench-capper...

    Beer-splosion :(

Oh yeah, after I auto-siphoned what I could, I got my brother's shop-vac that afternoon and made sure I sucked up what I could around the seams at the bottom. I checked on the keg before I went to bed, and then that morning is when I found the beer in the bottom. So I'd say it sat with a...

    Beer-splosion :(

Yeah it does, but my garage doesn't have a drain, and oddly enough, until I can get it cleaned up and reorganized, I'd rather have the beer contained in the freezer rather than on the garage floor.

    Beer-splosion :(

Very, very true. I'm trying to focus on the positives... After siphoning up what I could from the bottom of the freezer (btw, taking the yeast-guard off the bottom of the auto-siphon made for a great bilge pump...), at least the beer was nice and clear with good color. So at least I know my...

A bit harsh, but I accept my penance. :mug:

    Carbing...Beer Line Attached?

Just make sure, if you have a cheap-o picnic tap like I do, that it doesn't leak. I woke up to a gallon of beer in the bottom of my keezer this morning :\

    Beer-splosion :(

I said something similar when I opened up the keezer this morning... Though it was spelled differently, and rhymes with "buck."

    Beer-splosion :(

Yeah, it is a picnic tap... Didn't notice any beer around the post, and like I said, there was beer in the line. Ugh. I suppose I'll find out for sure when I get home from work today. I disconnected the dispensing line, so if there's no new accumulation, I guess that'd be the problem. I'm...

    Beer-splosion :(

Woke up to this: That's beer, probably about a gallon of it, sitting at the bottom of my chamber. I had noticed some beer sneaking up the dispensing line the other day, but didn't really think anything of it. I guess that should have been a sign there was a problem? Any ideas as to what...

Kegged my single today, quick question.

    Awesome, thanks all!

Kegged my single today, quick question.

Follow-up question... is there any reason to NOT go ahead and carbonate while it's conditioning?

Kegged my single today, quick question.

Went off without a hitch, but just to make sure I have everything straight as far as carbonating goes... I'm cold conditioning it for about a month at 40ºF, and I'm planning on the set-and-forget carbonation method at about 13psi at said 40ºF, which according to the carbonation chart, should...

    Chest freezer question

http://www.onemansbeer.com/keezer-build-diy-temperature-controller/ I used the newer ITC-1000 control unit, it's able to display in Fahrenheit as well as Celsius. There are a TON of how-to videos on YouTube that show all the steps to building it.

    Chest freezer question

I also have a 7.2cuft. freezer that I've turned into a fermentation chamber, and I absolutely love it. If you're handy with a pair of pliers and a dremel tool, you can build a great temperature control unit that will handle heating AND cooling for half the price of that unit you posted.
