Update time! The beer has been sitting in the keg with 12psi head-pressure @ 38*F to carbonate for about a week now. Took a few samples yesterday and it's not quite as carbonated as I thought it'd be at this point. We'll see how it looks on Thanksgiving. Mouthfeel is ever-so-slightly...

It's not an AMCYL keg by chance is it? I have trouble with my ball locks seating properly on that keg. I have to push back down on the collar to get it to seat.

You're not in terrible shape... According to Imperial, Joystick has attenuation of 73 - 77%. You're currently at 64% apparent attenuation. You don't still have the package of yeast do you? I'm just wondering when the production date was, the number of viable cells might have been lower if...

Yeast gonna do what yeast gonna do... What was your last brew? What was the yeast? What was the temp? You can definitely get a little predictive of strains and what to expect, but if it's a whole different set of circumstances, who knows. Give it a few more days and check gravity.
