    I appreciate the response, krazydave. But I guess I didn't ask my question correctly. I'm asking what the height should be on my burner setup? It seems like you are talking about spacing of the windscreen itself around the burner.

    Take the edge of a screwdriver to it. If it leaves a little scratch, it's stainless. If it leaves a big scratch, it's aluminum. Looks like stainless to me.

    I'm far from an expert, but it looks like you need more cooling capacity. The fan/wet sponge is probably not up to the heat generated by fermentation. You might be better off out in the open, your insulation may actually be holding heat in.
