    Lots of headspace in secondary

The only downside I can see to adding water is that it will water down your beer. The up side would be that you'll make more beer. Since the beer has about one volume of co2 in it, there is a layer of CO2 protecting the beer from oxidation. I doubt the exact size of the head space is important.

    Gluten Free Brewing- DPP-IV enzymes?

I think I've turned gluten- intolerant. One bottle of my Fat Ass Tired even gave me cramps yesterday. I sure feel better in lots of ways when I steer clear of wheat, etc. Anyways, I take some special enzymes called "DPP-IV", that break down the specific amino acid chains in gluten. I've...

    Problem with second runnings?

I think the delayed start is the key here. Not as a sign of infection, but as a lag time allowing the germs that are in every batch to get started. Big starters get the yeast going fully, putting off CO2 as well as alcohol, and preventing the wild beasties from competing. Hey, would you eat...

5 Gallon SS Stock Pot.. WTF!?

My 87 year old dad wrecked a Farberware pot by letting it boil dry. Burned the boiled eggs to carbon, stunk up the house terrible bad. Actually melted the aluminum off the bottom. Aluminum melts at 1200 degrees? But up to that, it will transmitt the heat all over the pot, that is why they put...

Yeast Shipping Gel Ice Packs - What is the gel?

I think we are talking two completly different gels here. The cold packs are a jelly. The dry desicant packs are a silicon crystaline compound that soaks up moisture from the air to prevent staling, clumping, or rusting. The jelly stuff might be food grade, the desicant may be poisonous. I...

Potential new way to air into the wort.

I wonder about the whole concept. I read that trub is a substitute- gooey wort needs less oxygen. It makes me think that possible only the big brewers that filter the trub out might need to aereate. Or maybe they ummm- pressure cook their wort, or some other technique thing that nessecitates...

    Emissivity

Go for it. Can you swap the pots after a guesstimated half the time? That would moderate the differences between burners. And, a good test would be blinded- have somebody else paint the pot, and msomebody who doesn't know the test theory actully do it- without looking at the bottoms. Not to...

    My new toy

Lift the handle to vertical and slide it up and down to adjust for different height bottles. Lube with chap stick or Vasoline, including inside the cap seater. Who cares about paint? Paint won't make it seat caps any better. Naval jely works. But I use "Lime Remover" from the plumbing...

    bottling wand mishap

I had some trouble with my wand last batch. They went away once I pulled and twisted on the end of the 'feeler'. I think there is a rubber washer inside that got off kilter. I use the bigger size "wine bottle wand" because it is faster. So pulling it out of the bottle leaves the bottle half...

Yeast Shipping Gel Ice Packs - What is the gel?

I've always thought the gel was gelatin, like Jelo. But with todays use of chemicals, I wouldn't assume that any more. I don't know if they use gel because it has a higher specific heat, or because it just doesn't run all over as it melts. Try Googling it, there is probably more info out...

    Emissivity

Heat moves via three methods. Conductivity, directly form one substance to the other. Convection, due to currents in the fluid. And Radiation, emission/emissability is how it is measured. Thermography being the measure of radiated heat, via emissibility. Propane heats our kettles via...

    Emissivity

Motorcycle cylinders are usually painted black. So are car radiators. Transmission/reflectivity of which wavelengths? We don't care about the visible spectrum. It's hot gasses giving off heat... IR ? Who wants to make beer the tastes like burnt paint? Time for Googling...

I'm not complaining mind you but...why no headaches?

I was talking to day witha buddy who is interested in homebrewing. I mentioned that I may be gluten intolerant. Bummer, I like malty brews. But he replied that lots of beers give him headaches. I asked what about other stuff? He said rice gives him headaches too. So I told him about how much...

Potential new way to air into the wort.

Many of the newer compressors are "oil less". The don't even have a crankcase to put oil into. It's just the piston with a teflon 'ring' on it. No more hazard than an aquarium pump.

    GRR!!! Off-flavor developing

I made a couple batchs pretty metalic. Didn't have to dump them, just not so good. My best guess was the stainless false bottom I had made. I left it soaking in too much chlorine for a week. It had a white oxide on it. I tried phosphoric acid, still white oxide, so I tossed it and went to a...

    Re-used Yeast

I believe the yeast is the top layer. At least it is in the secondary. But, I just pour the whole bunch into the starter. All that gunk didn't hurt the last beer. And the last batch had 10 times as much total. So the second batch will have 11 times as much. Big hoo-hoo. Decanting is just...

Stale beer smell - advice sought

I guess homebrew has more stuff in it, to give it more flavor and more aroma. So more stuff to smell later too?

    Bleach and Hot water

Cover your tub full of bottles. I leave mine soak in bleach for days. I figure if it still smells like public pool when I remove the cover, it's good to go. I've been using a plastic trash can, until just lately a huge Rubbermaind tub with lid. Easier to reach the bottom of the RM.

Mash and boil on different days

A memory just flashed in: To make sour wort, you mash 20% =/-., cool, then add a handfil of fresh malt. It takes that handful to get the infection going.

Mash and boil on different days

But, if lactos does get going , he's just making AciduLated Wort, no?
