    It will be hard for you to accomplish that with your first sour beer. The limitations of the bugs from the high abv will be difficult to overcome without advanced techniques. Maybe try something a little more simple for your first go at it.

    Roselare yeast blend question

    Probably will have to brew a fresh batch to blend with if you are going for something like the duchess. It is much sweeter than most flanders red and most of our home brewed sours will be drying out pretty dam good.

    Are you making a starter just to check viability or to pitch the proper amount of cells? If the latter, you are going to be way under pitching.

    What yeast did you use? When racking to secondary you might have just roused the yeast and they got hungry again, but having that full blown krausen is really odd.

    How do I know if I made a successful starter?

    Just think of is as a mini batch of beer. Taste your starter before you pitch it to make sure it doesn't taste "off." You should see a krausen or at least a krausen ring and a yeast cake start to build up on the bottom.
