Dry Irish Stout Water - advice needed.

If it helps, I have used that Wicklow profile from BS several times without the chalk addition, but with everything else, and it came just out fine.

BEST/WORST thing anyone has ever said about your own HB?

My son brought a drinking buddy and his new girlfriend over once. Knowing they were both big fans of Killians, and Smithwick Red, he drew them both pints of a Red Ale i had on tap. Both took big pulls off their glasses , and yummy noises ensued. The young fellow asked, "What brand is this." My...

    Single stage fermentation?

SO, much of the info I see in this thread leads me to conclude the following: If I ferment an ale 7 days, transfer it to a keg, and leave it in my chill chest 4 weeks, then serve, it will be crappy beer. If I leave my beer to sit in my fermentor for 4 weeks, then keg and drink one week later it...

WOW! Back in the saddle again!

Thanks everyone for the kind words. We got bubbles in the airlock of the cider! We just put yeast in the first batch of cream ale - so we are now MAKING BEER! It is still early, and it is nice on the porch today, so water is heating and we are gonna be mashing batch two - the red ale - in short...

7 days ready to drink beer > what you think ?

I have made Dawson's extraordinary ordinary Bitter for several years - I like it very much. I NORMALLY leave it two weeks in primary, and two weeks on gas. BUT, I have made this beer in the same 8 days as you see in that vid, and frankly other than clarity there ain't enough difference to speak...

7 days ready to drink beer > what you think ?

Well, I am in NEED of some homebrew. And until about 4 hours ago, I had zero reason to think I would be making any more any time soon (That is a different post!) But as it is, I am now gonna be brewing a 4 ish percent cream ale tomorrow, and I am going to try to start to rebuild my lost pipeline...

WOW! Back in the saddle again!

Thanks! That is kind, I appreciate it. Ended up buying some Notty, some 34-70, and some S04 - some EKG, Willamette, and Crystal . . . And I got the thumbs up to buy a keg, regulator and a picnic tap:ghostly:So I can skip the bottle trial! It's a pretty good day! We picked up some RO water on the...

WOW! Back in the saddle again!

So, many here are aware we recently had a devastating fire. We lost home and business, most of my machine shop equipment and inventory, and my brew gear. Good folks here on the forum have been very kind and generous in their offers (yoop89, JAReeves, THANK YOU in particular!) Getting back to...

7 days ready to drink beer > what you think ?

How exactly are you guys making an ale ferment take "2 weeks at least to finish"? I brew mostly 1.055 and under ales, and in the vast majority of cases they are DONE fermenting in 3-4 days. This is with any number of yeasts. When a beer goes from 1.050 down to 1.008 - 1.011 or so it is done...

7 days ready to drink beer > what you think ?

Ha. I make a 3.7% ordinary bitter with Notty all the time. If I REALLY need it in a hurry I can be grain to glass in 7-8 days. Why not? The fermentation is most likely done in 3 days, and sure as heck is in 5. 2 days to force carb and chill. It ain't as clear as it WILL get at that point, but...

    Anchor Steam

I think there my be some QC issues. A couple weeks ago I bought some tall cans of Anchor, and they seemed to me to very in flavor from can to can. After I first read this post, I went and bought 6 more. Definitely a can to can difference to several of us. The first two were very much how i have...

    Sour beer wort smells bad

I think souring beer smells like puke a lot. As long as it does not taste like puke when it is done, all is good.

    Kviek, any disadvantages?

When the whole kviek craze began, I heard all the stories of hyper speed ferments and great flavors and magical abilities to work across an incredible temp spectrum. So I said what the hell! I bought some Hornidal, and some Voss. I made three beer with each. I did not see where they were one wit...

Type of beer for long time in fermenter?

Well, I am sure as this thread rolls along there will be plenty of advice claiming that you just have to get the beer off the yeast cake as soon as it is finished fermenting. Of course this will be justified with a reference to the dreaded and fiercely deadly autolysis. Seldom if ever is this...

    Let's see some clear wort

Have we had this thread before? The one where one guy says "I do it this way" and the other guys says, " I don't so your wrong" and the first guys says my way works fine for me" and the other guy says, " No it doesn't" OH well!. As for me. Many of my brews make clear wort - Many do not. As...
