I've used flaked maize quite a few times in my cream ales. This is the approach and style I'd probably aim for as you can find a lot of recipe resources floating around.

Really depends on how much you want to spend to get rolling. I'm running 2 kegs with simple picnic taps right now on a single gas line. It's becoming a pain in the ass but hey...I've got beer on tap.
