    Airlock is not percolating - and it's been over 4 days

    start simple first. 1. are you smelling anything coming out of the primary? 2. Is there enough water in the airlock? if no to either of these questions, then probably time to re-pitch.

    those are reasonable substitutions. the dark brown sugar will add more color to the wort and the yeasts should have really similar results. It's their recipe, but it's going to be your beer. ;) you might not ever really exactly match a recipe. especially if the recipe calls out the alpha...

    can't beat a near frozen Lone Star when the temp is above 100 around here, but as someone said, that for mass consumption. Shiner Bock is my go to beer otherwise.

    Two almost identical systems... but 7% difference in EFF. Thoughts

    make sure you calibrate your thermometers as well. I made the mistake of being off by 4 degrees. Really made a difference in the amount of fermentables I was getting out the mash.

    hrmm, I always used white labs, but I would think that if you go ahead and smack the pack and wait for it to swell up, then don't you know you have active yeast? you can always smack it now and if it swells up, pitch it into a starter. that starter can sit in the fridge until you're ready to brew.

    the cacao nibs would count as a late addition, but the secondary is rarely 'required'. If I were you though, I'd try to follow the recipe as close as possible, but be very careful with the tranfer with regards to sanitation.

    I'd ask for internal dimensions. How many homebrew kegs could you fit in the freezer and how big of a collar would you need to add? Also, ask for a picture of the insides to see how much rust is there.
