    Advice on using unpasteurized juice...

Thanks for the feedback guys. I have a new problem though! I've heated the cider and it's cooling down. I busted the internal package in the Wyeast package and it says to wait 3 hours after that. I don't think the cider is going to be cooled down too much by the time the 3 hours are up...

    Advice on using unpasteurized juice...

Ok, so I add it before doing anything and wait how long? Also, I'd like my cider to be clear; I read I should add pectin enzyme to make that happen. At what point should I add that and how long should I wait before proceeding on with the honey and yeast?

    Advice on using unpasteurized juice...

Ok, I've tried to find the right thread but thought I'd go ahead and ask this instead of searching around for what I'm looking for! I have been making cider for over a year now, mostly using store bought organic, pasteurized juice with different combinations of natural cane sugar or honey and...

Forgot to ask, how long did you soak the chips in the Dewers?

A good batch is like that, you never know if you'll get the exact same taste ever again! I'm curious, what scotch did you use to soak the chips in?

    Bourbon Barrel Aging....

No, it's fully ready to go! As I said though, if I add the mix to carb it in the barrel, it wouldn't be refrigerated when serving so I guess I'll have to bottle. Here's the link to where I'm getting the barrel. Look under hobby barrels: www.kentuckybarrels.com

    Bourbon Barrel Aging....

I just ordered a 5 gallon bourbon barrel and was going to use it to age my cider after fermentation is complete. Usually I add some pure cane sugar and a wee bit of yeast to carb it and bottle after it ferments. I'm wondering if I let it age for a bit and then carb and bottle or if I can carb...

    Bourbon barrel aging...

Interesting. Just ordered a 5 gallon bourbon barrel, but I may try this on a smaller 1 gallon batch.

    Bourbon barrel aging...

You mean make sure I fill it up with cider when I do use it, correct? Actually, I have a connection for a 52 gallon one that I'm getting free. I don't know when I'll ever brew that much, but since it's free, I'm taking it. It'll probably end up being a table! The one I'm thinking of using is a...

    Bourbon barrel aging...

New participant here, have enjoyed what I have read so far! I've been brewing cider for a little over a year now; mostly using organic apple juice, sugar or honey and either champagne yeast or liquid cider yeast, and have been getting great results. After the fermentation is complete I...
