    Sabco kettle question

I'm moving to AG and want to get a keggle for boiling. The Sabco looks great, but I'm confused about the threadless ports. Does this limit the choice of false bottoms and screens, or can I use, say, the Hop Stopper? What screen or false bottom do people recommend with the Sabco keggle? Thanks!

    Autolysis: fact or fiction

My last ale (a Highland Gaelic clone) sat in primary 63 days at around 65-70F with no problems. Only one data point, though.

    Highland Brewing Gaelic Ale

Definitely! My "Martin Luther Maibock" should also be ready to sample. That one should be "interesting", since Boston swapped hops on me while I wasn't looking.

    Highland Brewing Gaelic Ale

Hey guys, I brewed this today, but upped the DME to 7 lbs, cut the Crystal to 1/5lb each, upped the Chinook to 1oz, and cut the aroma hops to .5oz each. Fermenting at 68F using Wyeast 1056. I've been undershooting OG consistently, but with 7lbs of DME I hit 1.058 (which is what...

    The Oil Change

We wash our cars once a year -- whether they need it or not! :D Seriously, I miss California, where the car wash was dirt cheap, and the cars stayed clean for days rather than hours.

Who's brewing this weekend (Feb. 16-18)?

I have a busy weekend ahead. I'm planning to brew a Highland Gaelic Ale clone, and also smoke some babyback ribs while I brew... Oh, and take down Christmas decorations :o

    I have become an EAC/Beersnob

Yes, and this is what finally drove me to hire someone to mow my lawn. ;)

    2007 Raleigh Beer Fest

My turn to drive. Jeff, you'll have to drink for two that day.

    I love my wife!

Yeah, I like the Macallan as well. But I still prefer a nice bourbon to a single-malt any day. I have a bottle of Lagavulin 16 y.o. languishing on the shelf, always the second choice behind a small-batch bourbon. I know it's like comparing apples to oranges... One thing I've noticed is...

    Sober Santa

Watching his feet reminds me of some nights long ago, playing ice hockey at 11pm on Friday nights (cheap ice time!). :drunk:

Aging question, 2 of them... :)

I've been wondering the same thing. I started directly with kegging, so I converted the 1-2-3 method into 1+ week in primary, 2+ weeks in secondary, then straight to keg that is chilled and carbonated. I've noticed that the flavors continue to improve for 6-8 weeks. So, would conditioning...

What did you ask Santa for?

Sweet! I just bought one of those from ABS, and it's freakin' beautiful! I'm asking Santa for two more! -Richard ps. good think I know you, otherwise "man-fridge" would sound a little, er, Dahmer-esque. ;)

    Critique my brewstand design please.

I'd add handles to help with moving it around (on the left side of your side-view drawing). Any estimate on how much it'll weight dry? Also, you might consider larger/softer wheels than the ones on the reference design, especially if you have to traverse any bumps or low steps.

    What are we drinking tonight?

I brewed a stout this past weekend, so I'm "researching" commercial stouts tonight. First off was a Young's Outmeal Stout, followed by a Bridgeport Black Strap Stout. It looks like I'll be working late, so I may also sample the Flying Dog Imperial Porter. Sadly, that's too far afield to...

    Hello from Texas

Hey, welcome! Congrats of getting your first brew under way! What did you brew?

    Preferred flavor?

What, no 'yeast' option? I voted 'hops'. Before I started homebrewing, I mostly drank IPAs. But I must say that since starting to brew, I've come to appreciate a wider variety of beers.

Is it too early? Spring beers?

I don't think it's too early. I brewed my last ale for a while yesterday (an espresso stout), and plan to shift the chest freezer over to lagers by early January. Thinking of a maibock to start.

    Guess what I got today?

Isn't it required in Marketing? Or is that just in Sales? Oh, and congrats Cheese! I agree with the other posts that the short commute is priceless!

    large stainless steel sinks

Hey Kai, I looked into this a while back, and aside from the rare Craigslist post, everything was out of my price range (by 10x or more). Damn those things are expensive! I ended up buying a double-sided utility sink from Lowes, which has worked out fine. I still dream of the SS NSF sink...
