    Newbie recipes

I am still a newbie around here. I brew all grain and recently moved to 10 gallon batches. I have several beers using recipes I've found here with great success. I haven't really found a definitive witbier recepie that will get me close to an Allagash white style that I am shooting for. I...

    Maybe not enough headspace

It calmed down and the blow off worked fine. Still fermenting very rapidly but the risk of the bung blowing off has subsided. Thanks to everyone who said leave it alone with the blowoff tube.

Spice, Herb, or Vegetable Beer Hella Vanilla Cream Ale

I took this recipe to my LHBS and he suggested that I should add 1/2# lactose sugar with 15 minutes left in the boil. I am hesitant to try this. Especially after seeing the one case where the guy brewed a sour batch and he added lactose. Any opinions. Also neither lhbs around here has the...

    Warmest freezer temps

Hi I just picked up a 14 CU foot standup freezer. I also ordered an stc-1000. I want to use this mainly for fermenting. My basement in the summer runs around 74 degrees. So can i force the freezer to stay in the low to mid 60s? Can freezers run this warm? Thanks. Jbeerman :rockin:
