    Same here. I use a 60W ceramic for my 84 cu.ft. chamber in my garage. when the garage is in the upper teens/low twenties, this helps maintain my temperature at about 59-60*F.

    Once you pitch your yeast you are better off just letting it go. Sure you'll end up with less beer at a higher ABV, but you can fix the issue with the next beer.

    If you are concerned that you are going to get an infected mead, I would crush the fruit after freezing and thawing it (helps break the cell walls) and splash a little vodka over it. The amount of vodka is not going to significantly increase the ABV of your mead, nor will it add any flavor.

    That is the only difference. It is the same spigot you would buy for a bottling bucket. You can get a cheap step bit at Harbor Freight, since it is only going to be used on plastic, it should last a long time.
