    NEW BELGIUM BOTTLES. defected?

If I understand you correctly, I've noticed that type of flaw a lot. Kind of like the glass wrinkled as it was flowing? I wouldn't worry about it if it's that kind of defect.

    Label Making???

Some homebrewing suppliers sell label making paper that is pre-gummed. If you buy regular office store label paper, it can be a huge mess when you want to remove them again. Check out some of the HBT vendors for the paper. I know at least Midwest has it, and it's cheap.

How To Sanitize Wooden Fruit Press

Won't you be using K-Meta in your juice anyhow? I'm not sure those things are meant to be sanitized. If you just want to clean it off, my choice would be distilled vinegar (w/water). Kills a surprising number of baddies, and very safe. My wife has been using it as her go-to cleaner for years...

How many gallons of homebrew in 2010?

I'll get that for ya. 24857+60+5 gallons Mojo clone (attempt, anyway) =24922

added 1/4 cup dme when i racked into the secondary

unboiled dme is not really a good thing to ferment, but you only added a little. It was a chance to add some baddies to your brew, though. Most likely, it will hurt more than help, but fear not.

    Recipe for Mojo IPA?

Brewed my version of this tonight. Hit all my numbers dead on, hoping for success! I haven't had Mojo in over a year, and it's unavailable in my area, so it will be tough evaluating how well I did.

    Possible infection

shouldn't make anyone sick unless it just starts to taste so bad they can't keep it down :) Maybe drink it quick, but it may not be infected at all. did the 'flakes' cover the whole surface?

    Skip the secondary for lager?

you may be too late to do an effective D rest if you wait that long. You really need to raise the temp while it's still a bit active. I would check and see if your lager yeast is known to produce detectable diacetyl. After that, you don't need to rack unless you need more lagering time. I...

    Custom caps are expensive!

Multiple colors is an option on the site. Each color reacts slightly differently to the laser, and the batch requires a bit of tuning per-color to get the best results, thus the small added fee. Otherwise, it all gets burned in one setup.

    bottle or secondary or both

If it's clear enough and attenuated when you leave, bottle it. otherwise leave in primary or rack to secondary to let it flocc. 3 weeks primary is not too long. best reason to rack is that you'll siphon some sediment when you go to remove it to bottle. secondary gives you another chance to...

    Custom caps are expensive!

You're probably right - laser printers don't bleed, and if the paper is good, it could be pretty durable. For obvious reasons, I've been using engraved caps when I bottle :D but I did try the labels on an inkjet, and ended up just using a sharpie.

    Custom bottle caps?

For anyone that's still interested, check out my Vendor Ads for a discount on engraved caps. They're good for homebrewer quantities, because there's no setup fee or huge minimum order. They'll ship immediately!

    Custom caps are expensive!

I also noticed that thread, but he's been long gone it seems. I'm producing the same kinds of caps, actually. Please check out my site if you're interested. Look at my Vendor Ads for a discount code. The sticker route is great for identification purposes, though I'd just recommend a sharpie...

    Custom caps are expensive!

I do custom for much less than $0.45 per. Any full color process will cost quite a bit more, but check out my caps! I hope this is a little bit better for you. :mug:

    1 or 2 weeks primary?

no problem. let us know how the watermelon comes through. I've been intrigued by the idea of watermelon in a beer for a long time.

Bottle carbonation issues after 3 weeks

this seems logical. your idea of repitching may do the trick. yeast should ideally be acclimated to a high ABV environment prior to pitching, but pitching a starter would be better than nothing.
  17. PintOfBitter

    1 or 2 weeks primary?

The thing you want to avoid is adding fruit at the beginning of primary. "Adding to secondary" really is exactly the same as adding to the primary fermenter after active fermentation is completed. It is the major outgassing of CO2 during fermentation that scrubs the flavors and aromas from the...

    Fermentation temperature

you'll have some pretty strong ester flavors, especially in the hefe. expect lots of fruitiness. I don't want to get you freaked out, but those fermentation temps are definitely above optimum.
