    Automation for 10-12 litres?

Just curious, what are you looking to automate? I looked into automating things, but even at the brewery there isn't much to automate, we still turn things on and off, and open valves by pushing buttons instead of turning them. IMO, there isn't much to automate at 3 gallons.

Komos V2 making popping and clicking noises?

No, the refrigerant lines. for the refrigerator. There may not be much you can do, but I minimized my noises by making sure they sloped back to the compressor

Komos V2 making popping and clicking noises?

it's most likely the refrigerant in the drier, I forget the exact name of the phenomenon, but my Kitchen fridge does it, make sure all lines slope and are not completely horizontal. that is supposed to help.

How my brews landed me in the ER

Not one bit, either sweet wort or finished fermentation for me. I can wait until it's done to see if it needs more time.

    Should I use Amylase?

My Parkway Pilsner uses a variation on @Schlenkerla triple hopped recipe, I have been using Viking Pilsner malt, Steam rolled corn (horse feed :D) and glucoamylase, I mash 60 minutes at 149 with a RIMS. It tends to get down to ~0.996-8 which is super dry, I love it, and the neighbors do too...

Wort chilling using CF-5 cooling coil

With such a small coil it will take forever. Even trying to drop the temp by 20 or degrees with the glycol will keep that compressor running much longer than it should be.
