    I mean if it hasn't proven to be a problem, then it isn't a problem. Is it the best practice? no, but that doesn't mean you're guaranteed an infection. Using something other than water is just taking out a microbial insurance policy.

    So far my only blend of yeasts has been Wyeast 3724 Belgian Saison and East Coast Yeast ECY05 Brett Brux. It's still in secondary, but each sample I pull is better than the last.

    I'd give it a shot with a starter wort with a better OG (something around 1.040. I use 200g DME to 2 L of water, mixed and boiled for 10 minutes and cooled). Can't hurt. Sent from my iPhone using Home Brew

    If you didn't get any activity, then I'd say chuck it. If you got some activity (just not a lot) I'd recommend trying to build up the starter in steps.     IPA recipe with tea

    I've never made a tea IPA before, but I think you may be better off making some cold brew iced tea (with your tea of choice or mate) and adding it late in primary or right before bottling. This way you reduce the risk of over extracting, plus you can add only as much tea flavor as you want.
