    Your favorite homebrew

OKay everyone, I thought it would be fun to post up your favorite homebrew and why. Limit to one or two. I know it's hard ;) Pumpkin Ale 5.2%- first pumpkin and better than 90% on the market. Cubed Pumpkin baked in oven with spices and added to mash and last 15 min of boil. The 5 gal keg kicked...

    Crazy Ferment

I see the yeast going crazy in there. Luckily, the hops have not clogged anything yet. I am hoping it will slow down by sometime tomorrow. Seeing this just makes me think that this is going to be a great beer. Ambient is 64 degrees.

    Crazy Ferment

Have you guys ever experienced an explosive ferment with Wyeast 1056? I pitched a 1.5 quart active starter into my batch and this thing is a beast. It has pushed so much hop matter out of the fermentor. It is pushing out so much CO2 that the growler of sanitizer has been shaking! Here's a picture!

    Washed yeast?

Hi everyone. I washed a lot of yeast this weekend and I was wondering what the shelf life is if it's stored in a mason jar? I plan on using some of the washed yeast to make a starter on Tuesday or Wednesday next week. I know it will be fine by then, but I have a lot (2 mason jars full). how long...

    Plate Chiller or new immersion

The new chiller took my wort down to 63 degrees in under ten minutes while the kettle sat in an ice bath! Crazy.

    Pliny: to secondary or not?

Enjoying a pint of the Pliny clone with the Phillies game on and another IPA mashing now. It really came out nice. I'll be using dry yeast a lot more often now.

    Pliny: to secondary or not?

Mine came out great. I forgot to put the strainer on the cane and I did have a clog at the very beginning but I got through it. This is easily the best beer I've made. I'll be brewing a regular IPA today. I'm going for a similar profile but more "session-able" (6-6.7%). I had two pints of my...

    Wyeast Slipped

I decanted into two sanitized mason jars before pouring fresh wort on to of the yeast. After a few hours, the mason jars have bands of yeast around the bottom and there is a huge, thick krausen in the growler. On the plus side, I have two jars to make starters with for future brews and the yeast...

    Wyeast Slipped

It was a quart. I already started chilling it because it has been.about 19 hours. I thought most yeast cell reproduction occurs in 18 hours. Should I take it back out of the fridge? I've already noticed a pretty nice band of yeast starting to form on the bottom. I'm going to be stepping this up...

    Wyeast Slipped

I can't believe it! I added a tsp of yeast nutrient because I knew that I didn't get a lot in there. This morning I have a nice foamy head on the starter. I'll upload a picture here. If I'm going to step this up would I : chill it and let the yeast fall out of suspension, decant, swirl, then add...

    Wyeast Slipped

Thanks. I'll get some more tomorrow and do another starter.

    Wyeast Slipped

Just had an ENTIRE opened bag of wyeast slip out of my hand and Spill all over the floor! My hands were slippery with sanitizer and it slipped just after I cut the bag! I was making a starter for Sunday. A little was left in the pouch and I got that in the starter. Should I step it up tomorrow...

    Chilling without a lid

Ha! Okay I feel MUCH better now. Thanks guys.

    Chilling without a lid

Does anybody here chill without a lid on their kettle? My new immersion chiller is quite large and the lid will not fit on the pot. I have a Bayou burner which is a 7 gal aluminum kettle. The lid will not come close to even covering the pot halfway with the chiller in it. Would you cover it with...

    Plate Chiller or new immersion

Why do you wait until the next day to pitch? Also, how do you keep the wort sanitary before pitching? Do you put it in the fermentor, put an airlock on, wait, then pitch the next day? What benefits do you get from this method?

    Rehydrating Hot

I was just wondering if rehydrating dry yeast with water warmer than 80 degrees would produce off flavors in the final product? I rehydrated two packets of US-05 and it may have been warmer than 80. I forgot to take the temp of the water before adding the yeast. It was warm to the touch, but...

How to get the best hop aroma from flameout additions?

I just read the article on using Late Addition Hops only. Check out www.mrmalty.com . I'm a big fan of smooth (medium) bitterness, huge hop flavor, and huge hop aroma. I'll be making an IPA with a BASIC grain bill and US-05 this weekend and will be using a blend of Amarillo and Simcoe hops at...

    Plate Chiller or new immersion

I think it's safe to say my wort will chill down much faster with the new chiller, ice bath, and whirlpooling :)

    first AG

Hefes are the BEST! Cheap ingredients, quick turnover, and so tasty. As long as you have your process down, hit your rests/decoction temps, and mix your grains with the rice hulls DRY, you should be golden!
