    I don't know how the exact Original Recipe tasted because I added a few things to mine that I listed on this thread already. I loved how it turned out and my keg kicked in about 4 days. I'll be brewin 15 gallons of this for Punkin Chunkin this year.

    Lager yeast starter temp?

    If I need to, I'll cold crash the starter, and decant the spent wort before pitching. I've always pitched the entire starter right at high krausen. I want my Octoberfest to be amazing.

    Do you need to keep you lager yeast starter at cold temps? I was under the assumption that you could make the starter at room temp, pitch at room temp, then put it into the fermentation chamber. I can't make a cold starter. Please put my mind at ease.

    How about the best yeast to use for Oktoberfests? I make starters from Wyeast smack packs. Which Wyeast have you guys found to be the best?

    Actually, I'm going to make it on August 1st. I just checked my calendar. 3 weeks primary and 6 weeks layering should do it. I'll keg it on Sept 29th hopefully and it'll be ready for October. Even though Oktoberfest is in Sept.!

    Thanks. I just used 2.5 oz. in a Honey Orange Wheat beer on Saturday. 5 gal batch so I hope I'll be okay.

    When does everyone here typically start brewing their oktoberfests? I'm thinking of brewing my first one (not my first lager) on August 18th. I'm hoping it'll be done around the end of October. I'm pretty late already I'm assuming.

    My buddy Bon. He's the drummer inmy band. After helping out with two brews he began brewing himself. He picked up AG brewing quickly. Now we do two batches at the same time.

    I've used my hydrometer for years and know how to calculate abv. I know my set up yields 70% efficiency.     Ditching the hydrometer?

    I keep meticulous notes and make sure I hit my mash temps. Also, I let it ferment out for three to four weeks until I see it's fairly clear ( i can see an inch or two in from the side while looking at the yeast cake) and the yeast cake is compact. I also keg so I'm not worried about bottle bombs.
