It might be the software, I've seen some bugs in 2.1 that could affect water volume. Are you hitting your target volume into the boil pot and into the fermenter?

I had some sterile mason jars with water in them from my last yeast washing, so when I racked to 2ndary, I just scooped the top layer of trub from the bucket with a spoon and dropped into the jars, careful to keep everything sterile. Do you think this will work? Anyone else try this?

Is there a style guide for Cascadian Dark Ales / Black IPAs? This style is very prevalent here in the PNW and I love to drink and brew them. I would enter a contest if I could brew what I like.

it varies. I have had it in Rogue Dead Guy which is a maibock, Iron Horse Quilters Irish death which is a dark ale (had it twice), and American brewer Breakaway IPA.

I'm happy to say my fermentation temp is a consistent 65F. I am using harvested yeasts from known good batches so I hope I won't hit this. It is a very off-putting taste, I am not sure the result would even be good enough for fish batter.
