    I use the Eva-Dry things with fans blowing on them too. They work, but the real secret is to keep the door/lid closed. Humidity gets in every time you open the door. I try to only open quickly to swap kegs or rotate in a fresh Eva-Dry and things seem to keep pretty dry in there.

    I once brewed with yeast that had dried to the bottom of a carboy for who knows how many months. Beer fermented strong and clean, came out great! I think you'll be fine :D

    I don't know what to say. I've never encountered a scenario where I'm boiling before collecting my full volume. You're either draining very slow, or you have a turbocharged boiler.

    Why wait? I turn on the heat as soon as the runnings cover the element. Draining a 10 gallon batch only takes me a couple of mins. I vorlauf a quart or so then drain with the valve fully open. Quick and easy.

    Why would it take a significant amount of time to reach volume when batch sparging? If it does, something is wrong.

    Sparge and drain should not take more than a few minutes and you should be above the enzymes' active temp range long before it would meaningfully impact fermentability. That's one of the main reasons to batch sparge. You don't need a mashout because you're already heating up beyond the activity...
