Pure Nitro setup questions for stout

Cascading comes from a small amount of CO2 that is dissolved into the beer being violently agitated out of solution by pushing with high pressure through the restrictor plate in the stout faucet. Nitrogen or argon doesn't dissolve easily into liquid at serving temps, it's just there to push with...

    Storing beer in kegs

I like to naturally carbonate when I won't be tapping a keg for a while. Just add sugar, seal the lid with about 30lbs CO2, purge a couple of time and let it sit at room temperature. Without oxygen in there, they keep for a long time.

    Who's smoking meat this weekend?

I use cure #1, as per the reasons listed in the link I posted. Follow the instructions there carefully and use the calculated parameters and you will be safe. But yeah, cured smoked chicken is awesome! I also like to make poor man's pastrami using cured chuck roast and it's pretty amazing.

    Who's smoking meat this weekend?

Read this page, prague powder can be deadly if not handled with respect. There's a lot of info about curing safely and a calculator to help you build a recipe. As far as spices, herbs, etc, anything you would normally use in a brine or marinade recipe should work great...

    GOOD on Netflix STREAMING?

I really liked A Quiet Place. Yes, you need to suspend some disbelief. I came out of the theater going "if it was me, I would've..." because the family's means of dealing with the problem were pretty silly and certainly not sustainable. However, that's all beside the point. It was ultimately...

    Who's smoking meat this weekend?

I always spatchcock a full bird on the smoker. If you have time, curing it with prague powder beforehand makes for some amazing meals!

    Pellicle Photo Collection

I believe some molds are toxic. If there is mold, it should be dumped to be safe.

    Who's smoking meat this weekend?

Sorry, I'm not much of a photographer, but the lamb came out pretty tasty. I salted as usual with half teaspoon of kosher salt per lb of meat. Then I fried some onions, garlic, rosemary, thyme, and mint in olive oil and put it inside the roast. I trussed it up in the mesh sleeve it came in and...

I'm gonna try a leg of lamb roast this week on apple & cherry smoke. This will be my first smoked lamb.

    GOOD on Netflix STREAMING?

I watched season 1 of The Expanse on Amazon. Really well done. Political action thriller with a touch of detective noir. Reminds me of Battlestar Galactica with a little bit of Firefly and a 24 vibe. I'm anxious to find time for season 2.

    GOOD on Netflix STREAMING?

I watched The Cloverfield Paradox. It's entertaining enough, but has a lot of silliness that requires suspension of disbelief. There are barely any monsters. It's basically filler to segue into the next installment.

    DC Group Buy #21

I gotta find time to brew again, my taps are mostly dry! The talk of peated and beechwood smoked malt is giving me the itch. The smoked porter in my drop-down is amazing, even better on my nitro tap and never lasts very long. I did recently keg a smokey mild that's been sitting on my massive...

    Who's smoking meat this weekend?

I'm not sure what piece of the puzzle you might be missing, maybe you need more smoke? A lot of folks supplement with a pellet tray in their MES or in a remote box (mailbox mod). Here's a good article going into some of the science behind bark creation...

    GOOD on Netflix STREAMING?

Why so many of the best made shows feel they need to have so much swearing, I don't know. It doesn't offend me, just makes everyone sound like they're in high school or something. Also lessens the impact of a well placed f-bomb or two. Breaking Bad didn't need a lot of profanity to be the best...
