whoops.. high gravity in hefeweizen after three weeks

Hard to tell, how much priming sugar did you use, or what Co2 level did you shoot for? Putting them in the cooler is good idea, but I don't think you will have any bombs, maybe some gushers, only time will tell. P.S- Did you batch prime this beer, and if so did you check gravity before or after...

    New to the brewing hobby

All bottle conditioned beer will have some trub at the bottom of the bottle, nature of the beast. One way to minimize the sediment is to put your Mr. Beer keg in the fridge for a day before your bottle. It helps compact all the trub in the bottom of the keg so less will go into your bottles...

Not to poke fun, but this made me lol...hard. I'm sure the beer will still taste great, lemon is not a bad flavor to add to a wheat beer anyways:D

    Beginner Cider Questions

I let my cider go in primary for 3.5 weeks, letting go a bit longer helps to clear it up some.

    corn sugar

I depends on how much of it you use. It will boost ABV, but too much will give you cider flavors and thin your beer out.

Newbie's First non-Mr Beer Brew: Briess Final Course

You can add corn sugar to boost ABV without changing flavor, but you have to make sure that your fermentables are at minimum 2/3 malt to 1/3 sugar. Too much sugar and you get start to get cider flavors. I would just use some plain light DME though, it will get you more ABV without drying out...

Newbie's First non-Mr Beer Brew: Briess Final Course

Looks like a winner to me, you will be making beer! I really like crystal 60, good caramel flavor, really makes a malty beer stand out. I recommend using a beer calc program to help you prototype your recipes. Hopville.com is pretty easy to use and web based. Here is your recipe. As far as...

OG reading is now .998, what is going on?!?!

It sounds like he is using a kit with Hopped extract, like Mr. Beer. Those you are not supposed to boil, and any hop additions are only for flavor/nose since the extract is already hopped for bitterness. Just thinking out loud...

    Oatmeal question

Ok, so I made an oatmeal stout. Recipe. During the boil a sort of sludge formed at the top, very dark a very thick. Is that normal? Non of my other brews have had this. Oh yeah, I steeped quick oats for 30 min at 150-160. Thanks for any input

I have made a huge mistake

Ok, so I bottled my cider (just apple juice and nottingham yeast) this weekend. I was going to split the batch, some with priming sugar and age for a while, and some with 3 1/2oz of apple juice as back sweetening and consume strait away. I was going to let the back sweetened bunch carb for a...
