    Isn't there anything else on earth than oxygen for the yeast to grow?

    Exactly how I used to do it - 5 gal batches, used the toothpick, but I use O2 and a stone now. Don't know that the olive oil made much difference vs nothing, but didn't seem to hurt anything.

    Knoephla Hotdish

    Just made this for my family this evening - turned out great! Good instructions, very easy to follow. For being a pretty simple recipe, the flavor is really good. Two of the kids said to "put it on the yummy list" - the list of dinners that all four kids like. Guess that's high praise!

    I wouldn't smoke with mesquite - it's great for direct grilling some steaks, but it's supposed to give off a bunch of creosote as a smoking wood.

    "Kolsch" Variant

    You could try subbing some pale ale malt for some of your pilsner malt, give a bit more biscuit to it. I'm about through a batch of kolsch, and think I was 40-45% pilsner, 40-45% pale. Next time, think I'd go 60/20 pilsner/pale, lighten up the flavor a bit. Still, it was very tasty.

    What did I cook this weekend.....

    Simple kebobs, sort of a ginger-soy sauce-sesame marinade, but turned out really good. Wife and I discovered we both LOVE grilled white mushrooms - I'm not even a big mushroom fan. I love grilled onions though - this meal turned out incredible!
