    Fruit in a "hot" saison

    The solution to pollution is dilution. Any beer that is "too hot" can be blended into another, more benign one and create a novel concoction. Tough to do with bottling, easier with kegs.

    Extreme heat tolerant yeast strain

    I just used Mangrove Jack's Abbey yeast. It isn't happy until at least 83*. I fermented a Leffe clone and it went into the mid/high 80's. Best Belgian I've ever made.

    With 120 diastic power, the Fawcett Pale ought to be OK by itself, but if your temps were as you state and the milling per your usual, this would be my bet. Old grain? Perhaps got really hot in a warehouse somewhere?

    Kegging question

    If it is done fermenting and not creating its own CO2 you will want to make sure it has a blanket of CO2 on it to prevent oxidization. If I misunderstood and you are asking whether to carb it all the way up or not, I wouldn't do so, I would do that after lagering.

    If physically unable to attach both to the contactor, you can attach the lamp leads to the element connection or splice in anywhere along the line (messy). The purpose is simply to provide a parallel circuit (lighting the light) when the element is turned on.
