    Do you know if a poorly ”mixed” wort will have problems fermenting (aside from aeration concerns). For instance, pockets of sugar equating to pockets of alcohol? Would it all work itself out if/when I transfer to secondary?

    Hey folks, I just brewed last night and forgot to aerate before pitching. I have activity in the air lock so I'm not too concerned about fermentation, but I read somewhere that a wort not properly stirred can give inaccurate gravity readings. Thoughts and or other matters for concern?

    Question: I've had yeast rafts in my beer that eventually settled to the bottom in secondary. Now I have tiny white specs that float just below the surface that appeared after two weeks. I think its from the star san foam but I have no idea. Ideas?

    Is there anything besides brewing larger volumes that will prevent a lighter style from coming out darker than it should? I was told to go with DME instead of LME, which I did. It looks like it's going to come out a burnt orange instead of the cloudy golden straw color I was hoping for.
