    Summer time brewing stinks

    I just brewed this last Saturday and had to give up at 80, it just wouldn't chill any further - my tap water is lukewarm basically. Pitched the yeast at 80, put the carboy in a closet at 68 room temp. Will see how it turns out in a few weeks...

    Anyone tried Cola bottles ?

    Just curious - has anyone tried those 12oz cola glass bottles for beer ? I want to have my lagers in clear bottles, so the other day I capped one of the empty 12oz cola bottles to test it and the cap seems to fit just fine. But not sure if it will work OK for actual bottling. Has anyone tried ?

    carbonation question

    Actually recently I started adding a very small amount of yeast during bottling. Carbonates anything in a matter of days. (Still prefer to wait though to let it mellow out for a bit, but as far as carbonation is concerned it will be done withing a few days)

    +1 to this. I never use bottle brushes. I just rinse a couple of times right after drinking with regular tap water (I usually shake it too to make sure any remaining yeast is dislodged from the bottle) and put the bottle away.     Hm, I'll try oxyclean next time I get Crooked Tree, but I m still skeptical. I think I tried a bunch of different things on those - boiling, boiling in detergent, bleach I think as well, and nothing worked. I mean the actual paper does come off eventually, but the sticky , stretchy residue stays...

    Can You Guesstimate ABV late in the game?

    If you go to https://www.brewers-assistant.com there is a toolkit to the left - just click on "Refractometer", then choose "Final" in the dropdown, enter current brix(refractometer) and gravity(hydrometer) measurements and click Calculate.

    Milk is the best glue for bottles. I never use anything else. On a side note - does anyone else here just HATE Crooked Tree's labels ? Damn things take forever to take off and even then never completely off. Anyone know an easy way to get rid of them ?

    After 2 weeks in secondary - air lock activity again?!

    A few times I brewed beer in which I added bananas (no sanitation , just peeled them, cut them and dropped them into carboy) after fermentation. Airlock activity restarted after that which I assume is just yeast munching newly added sugar. Didn't have any infection and beers turned out great. So...
