    brewed 2.5 gallons last night! forgot about the 90 min boil & missed my target gravity. OG= 1.055 who cares....hydro sample tasted amazing. also.... used wlp550 because that's all LHBS had. see you in two months!

    just tasted my hopped kombucha... pretty great! i steeped a small handful of columbus pellets with the teabags for 15 minutes (all in a hop bag for easy removal) and then followed the usual process. in no way (that i can tell) did using hops inhibit the mother's growth... this batch produced...

    i write the name & date in white china marker right on the bottle. i label my carboys in the same way... works great.

    yeah the book is super interesting but it is heavy on the science... so don't get it if you're not interested in learning about yeast biology.

    i'm still trying to figure out the carb thing with kombucha. i used glass bottles and batch primed my gallon just like i would beer (3 tbp honey) and got very little fizz. i think most people put a little fruit juice or tiny piece of candied ginger in each bottle to get the fizz going...
