    I guess my question is, how do you avoid going defcon 5 after 24 hours and adding new yeast. I put too much effort into the boil and want to salvage. Can I pitch new yeast after 48 hours?     LHBS talked me into pitching. Said the yeast would be a slow start, but should be fine. However, I overshot my SG. Hit 1.068. If I don’t get any action in 24 hours, I will grab another vial and pitch again! Edit: 12 hours after pitch and no activity. Uh-Oh!

    I made Yoopers oatmeal stout with a few tweaks. I added 4 oz of cocoa nibs (sterilized in whiskey) to 4 gallons. Getting ready to bottle and there is a dry chocolate flavor. It is not bad, but the back end has a very bitter chocolate flavors. Is there anything I can do with a week from...

    Oatmeal Stout Yooper's Oatmeal Stout

    SG 1.068 FG. 1.014 Has a nice flavor. So I split into 2 container. Kept 1 gallon As Is! 4 gallon got 4 oz chocolate nibs (sterilized in whiskey). Now has a smooth taste, but a dry chocolate. Need to sweeten out a bit, but how?
