    Well.... If you mix it with another gallon of plain AJ the end product with be 4.5%. Try a small sample & do a 50/50 mix of ur cider & plain AJ....see how it tastes & adjust the ratio from there if needed [emoji106] Cheers [emoji111]

    just as an FYI... testing adding Erythritol to some of my ciders test batch in 1/2gal container SG = 1.004 (post fermentation) Added 4T Erythritol and SG went to 1.022 (which is more in the range I prefer my ciders)

    Types of ginger...

    Wondering which of these gingers have become your fav?? Was gonna try some crystallized ginger from Trader Joes in a batch of my cider for the holidays :-) (I already use the pickled ginger leftover from a sushi order in my ciders and really enjoy that.) Cheers!

    Looks like what I get when I lacto ferment pickles! Perfectly normal in that situation. I've not had same thing with any of my ciders. Cheers & Good luck [emoji111]

    Yeast Nutrients and Sulfite

    Some yeasts are Much bigger nutrient hogs than others. My fav - D47 - has Very Low nutrient reqs - I never use it during fermentation & have had Zero issues. Cheers & Good luck [emoji111]
