    Soup

Many recipes or instructions say use equal amounts of flour and oil. I use less oil, just enough to suspend the flour, closer to one part oil and two parts flour. Use a low flavor oil with a high smoking point, refined coconut oil or avocado oil are examples. You can use high heat and a heavy...

Thinking about next weekend’s traditional leftover turkey gumbo. Yum 😋. Start with a roux…Cajun trinity, turkey broth, turkey chunks, Andouille sausage, shrimp . . . What do you do with the turkey carcass?

So a little more research indicates that dried hominy that has already been nixtamalized is available. I will have to look for that also. I make the red version several times a year. It’s a family favorite. We garnish it with lots of fresh shredded cabbage and chopped raw onions. I buy the...

If you plan to use dried corn you should research nixtamalization. The frozen stuff and the stuff in cans is nixtamalized, a process that involves soaking in an alkaline solution. The process changes the corn significantly. I have only ever made pozole with canned. I didn’t know that the frozen...

    Coffee Milk Stout

I have looked into adding coffee quite a bit. There are a lot of threads on here about the subject. I came to the conclusion that whole beans a few days before packaging was best. There are lots of options. Many folks are convinced their method is the best. I don’t recommend putting coffee in...

    eBIAB experiences?

Nonmetallic sheathed cable (Romex is a brand name) doesn’t require protection where it is not directly accessible. It is kind of a judgment call for code enforcement inspectors. Protection in unoccupied spaces like an unfinished attic or basement is often not asked for by inspectors. Around here...

    eBIAB experiences?

I got confused too… @doug293cz is better at math than me. Many would view it as a technicality. Romex type wire is supposed to be protected, as in behind drywall or something like that. It is not rated for exposed applications like pictured. I’m sure I would never do anything like that. ;)

    eBIAB experiences?

Just to be clear. We nominally have 120 and 240 volts supplied in the USA. 110 and 220 are historical hold over terms. Probably a technicality not worth arguing over. It does make some difference in the math calculations. If the OP is running his system on 120 volts, then the 20 amp receptacles...

    eBIAB experiences?

Did you get this refurbished equipment from the manufacturer? They should provide all the installation specifications and instructions you need. I am not acquainted with 240 volt wiring for electronics so I don’t know about the neutral requirements. If you didn’t get installation instructions...

Grain bill question from a complete newbie

It is common practice to use yeast from a previous fermentation. If you save yeast you will likely want to make a starter. Look into overbuilding starters. There are lots of threads here about saving yeast. Save bottles from beer you drink, have friends save them, ask a local bartender to save...

    BIAB - For amateurs?

I have not used a pH meter so I guess this is anecdotal. Brun’ Water allows one to split strike water and sparge water. I just enter all the water as strike water and no sparge water. It seems to work fine for me.

I live in California. I was talking to my friend that lives in Wisconsin. Without thinking I said something about him living on the East Coast. I felt a bit surprised when he informed me that the Midwest was not on the East Coast. We settled on the east coast of the Great Lakes.

    Cold crashing in glass carboy

I have a 5 gallon carboy. I use a smiley face mylar balloon. It is kind of a standard size party balloon. I typically have around 1 gallon of head space in the carboy. Cold crashing from 70F to 32F uses up what looks like one third to one half the CO in the balloon.

    BIAB - For amateurs?

BIAB beer is just as good as any other beer! Says the guy that has never done it any other way (me). It is really not practical for professionals due to volume constraints. So amateur? Yes. There are a few odd exceptions to professionals not doing it but they are quite rare.
