    Highland Gaelic Ale kit?

    Hey guys, I was just wondering if anyone has made the Highland Gaelic Ale malt extract kit off of the Austin home brew website. I love Gaelic Ale and was wondering if anyone has compared the kit to the actual beer and if it tastes anything alike. Thanks for the info!

    The next step?

    I am a malt extract brewer and I am serious about making the transition to the next step. I have heard about all grain and partial mash brewing, I just didn't know how to make the transition or what to do. Thanks for the help!

    Problem?

    The thermometer on my carboy is at about 68 degrees. It has been in the same place the whole time and hasn't had changes in temp. There are no heating/air vents in the closet and stays dark.

    Air lock

    I just put a batch in a glass carboy and put it in a closet at about 7 pm last night. When I put it in the closet the air lock was filled up to the fill line. I look at it this morning, there is bubbling going on in the air lock but the water level has dropped. Do I need to add more water back...

    The directions said to bottle the beer and then let it sit in the same place that the carboy was in. Then after a week move it to the fridge for 3 more weeks. It was an ingredient kit.
