Can a beer properly condition in a keg under co2 in the cold kegerayor?

hmm, I dont know but my gut says no, to cold for the yesties to do their work. Conditioning is the act of natural carbonation. if you set it under co2 in the cold and never gave it priming sugar then it is unlikely to " condition" at least thats what i think

    Aging rules for stouts?

unless you have a keg setup then yeah:rockin: but honestly i use the 1-2-3 method and most times its good by then and yeah it is really hard to not drink it all before it is REALLY GOOD! brew multiple batches and put half away for storage if its a big beer, if you cant keep from drinkging it...

Cannot cold crash 3 days prior bottling.. use gelatin ?

ido not know if 2 days is long enough. will waiting 4 days matter that much ? if you want super clear beer i would stir it in let it sit 4 days then rack and bottle, but thats just me and i dont always do things the "right" way

Cannot cold crash 3 days prior bottling.. use gelatin ?

0.5 tsp per 5gal of beer for the gelatin. let it soak in about 1\8 cup of water for 60 min add hot water to disolve after the 60 min about 1/4 to 1/2 cup works best to do this right after you transfer to secondary 4-5 days and it will be very clear rack to bucket and bottle as normal

What is the right thing to do

always have spare parts, that way you could sanitize and replace without it being left open looking at the picture i would ask if the foam is receeding? if it is just swap in a clean airlock wipe down the outside a bit and let it roll :rockin:
