    I only run the High Efficiency schedule. I have not tried skipping the 20 min Dough-in at 102.

    Yes 90 min mash. Sometimes I bump the mash out to 20min, but I have only done that recently.

    I typically run 3.5 gallon batches (60+ so far) and beyond normal loss due to yeast and dry-hopping I haven't noticed the final serving Keg being that off of my expected volume, Occasionally some yeast strains seem to make more sludge, but the biggest loss I find is from massive dry-hopping.     sometimes if I move the fermenter around or when I add dry-hops I'll get some off-gassing that looks like fermentation restarted. also raising the temp will cause some off-gassing. Check the gravity in a few days.

    I edited a previous recipe that had a 90 min boil, all I did was change the hop AA%. Before running it today I noticed that every time I edit it it changes the Pre-hop Boil to to 90 min giving the total boil of 150min. I think there a a few bugs to work out with the changes they have been making.

    I religiously check the advanced editor and re-sync to the Z before every brew. Early on I made a mistake and had only a 20 min boil.

    Damn - 15 min into the boil and The Web page says nothing brewing....:( Lost internet....its not doing anything just asking for wi-fi....I guess I'll need to run the boil when I get home. Powered the Z Off and On and it picked back up where it had died.

    Dry hopping and cold crash

    I'll dry hop for 7-10 days. I split the dry hop additions for hoppier beers, I'll put in hops 10 days before cold crash and again 5 days from cold crash. I'll cold crash for 24-48 just depends on how busy vs. impatient I am at the time.

    I agree a Saison wold be good. other styles I've had in wine Barrels are Golden ale (but is was a Chardonnay barrel), Belgium triple/Quad go well with red wine, some stouts could work - the only Red wine barrel aged stouts I've had are, Sierra-Nevada's Narwhal, and Stone's Russian Imperial...

    Anyone entering the National Homebrew competition? I was going to enter a barrel aged coffee stout. Debating on Vienna lager Pale ale We'll see how the Red Rye turns out.
