    Azacca, Ekuanot, Wai-Iti NEIPA hop combo, thoughts appreciated.

    I just kicked a keg of Brut IPA that was 100% Azacca. It gave me a ton of passionfruit and mango. It worked great as a standalone hop, but if you want a blend, I'd stick with tropical fruity, or maybe stone fruity hops. Never used Wai-Iti or Ekuanot, so I can't comment on them specifically.

    Do you have a CO2 tank that you can flush the hops, and then the fermenter after adding the hops?     I usually shoot for around 52-54 F for 7-10 days, then boost it 5 degrees a day up to 65 for a few days, then crash and keg. I rehydrate.

    It's my current favorite dry lager strain! It ferments fast and clean, and drops clear super quick. I've done two rauchbiers, a Vienna, a doppelbock, and a schwarzbier with it. I've read that it's tolerant of higher temps like 34/70, but I haven't tried that yet. Overall I'm really impressed...

    Starting kegging from scratch, want to do it right the first time

    When I built my kegerator I knew I wanted stainless hardware because it'll never wear out. All my shanks are stainless, all my faucets are stainless (Perlick & Intertap, all flow control), and now even my quick disconnects are stainless (~$15/each from Williams Brewing, occasionally on sale)...
