    If you're concerned about lack of yeast, you could rehydrate 3-4 grams of dry yeast and add it to your bottling bucket along the with priming sugar, just as a safety measure. I've used cheap grocery store yeast for this with no ill effects that I could detect.

    When you add the cereal mashed items like oatmeal or grits to the main mash, do you calculate their weight for mash-in liquid from the grain's dry weight, or the weight after the cereal mash? Might be a stupid question, but Newbies do have special dispensation.

    Malto Dextrine is the numero uno ingredient in Splenda, though. My a large amount I suspect — it's used as a filler to make it more sugar-like. Look at the ingredient order on a package sometime.

    My Technique: As Simple as Possible

    Add a little vinegar, teaspoon or so per gallon to your water if you're concerned about high ph value. Vinegar will also make bleach work a lot better by lowering the ph. 1 ounce of each to 5 gallons of water. No rinse.

    Yah, you're just a relative youngster.;) So far the only concession I make to age is I refuse to brew any recipe that takes longer than 4 weeks from grain to icebox. I'm not cookin' this stuff up for the survivors.:D (BTW — I don't buy green bananas either.)
