    pale ale recipe

I usually mash between 1 and 1.25 qts /lb too. 2 times your mash water is a good goal, but not a steadfast rule by any means. And sometimes it is just plain wrong. You need to determine how quickly your system can boil wort. Say it boils 1.5 gallons/hr like mine does. This means, you need your...

SRM? IBU? Mash temp? Expected OG and FG? 5 gallon? You may be in IPA territory. Looks good though.

Trying to put together a Double/Imperial Wit recipe.

You don't necessarily need to wait a week. Check it tomorrow and the next day. If here is no change, repitch. Could your mash temps have been off?

Trying to put together a Double/Imperial Wit recipe.

Hmmmm....check it again. Make sure it is the right temp and doesn't have a lot of things floating in it. You described a pretty vigorous fermentation. Could the yeast have been old? I am surprised to hear it is still so high, considering what you wrote before. You need to let it finish...

    Quick question on big beers

The drier beer is what I thought the reason was. Thanks everyone. When I say mash a higher volume, I mean mash "like" you are going to brew ten gallons of beer. Then, boil the wort down to five gallons. In a sense, concentrating it. The mouthfeel makes sense. It would be very syrupy.

    Quick question on big beers

I am brainstorming my first truly big beer. Made a couple 9%-10%, but nothing huge. I see a lot of big beer recipes add a bunch of dextrose or honey or candi sugar. My question is why add SO MUCH simple sugar? Why not mash to result in a large volume, then boil all the way down to a highly...

    Help with Honey Ale Recipe

1 will not work. It will ferment out. 2 will disable the yeast, but then it will not carbonate in the bottle (do this if you keg) 3 will sweeten the beer, but will not add saltiness or body. Leaving as is and using honey to prime for bottling will only slightly affect taste. It will still be a...

    Help with Honey Ale Recipe

To modify your recipe: Lose the rice extract you want a maltier flavor, right? Increase the pale DME to 4 lbs Add 1 lb darker DME of your choice. Hops look okay Add honey after primary slows. Check the color, OG, etc of these recommendations before proceeding. I am throwing out ideas...haven't...

    Help with Honey Ale Recipe

Bottle what you have. No need to waste. And you may like it on a hot Sumner day. Who knows. Keep the yeast cake you have and make another batch with a new recipe tonight. Take a proper hydrometer reading. Pitch on the yeast you have. It should finish fermenting in less than 2 weeks. Keep a...

    Help with Honey Ale Recipe

Back sweetening a light ale such as this is bot going to give it what you are looking for. You want malt taste, not sweet taste. The rice extract you added caused this very light taste. I recommend adding a darker extract next time you brew. Amber maybe. And steep honey malt and maybe 8 oz of...

    Help with Honey Ale Recipe

Are you sure your hydrometer reading is right? It is definitely odd to be that off your OG when you are all extract and honey. check that out. What is FG? Definitely add honey malt next time. How does it taste?

Trying to put together a Double/Imperial Wit recipe.

I don't think you'll needthe 4-5 weeks at all. No need to let it clarify, it's going to be cloudy. Maybe cold crash for like 3-4 days to drop the bulk of the yeast cause you're bottling. Just make sure the gravity is steady for 3 days in a row first. Good luck

Trying to put together a Double/Imperial Wit recipe.

It is coming through the lid? Is the lid broken? Sounds like the seat is bad. Not a good thing. Two weeks in the primary is probably all you will need. In like 3 days, check the gravity. Give it a good swirl every now and then if you like to do that (I do). Fix that lid or get it new one. It...

Trying to put together a Double/Imperial Wit recipe.

Did you have a starter? May be hard to get it as low as you want with one package of yeast. Did you aerate?

Trying to put together a Double/Imperial Wit recipe.

What is the SG? If it is finished, keg/bottle it. If not, let it sit until it is done. Did you hit your numbers? OG? You want to drink it young, so I wouldn't age it . Just enough to finish fermenting.

    Where Are My Hops???

I may be mistaken, but I believe you are supposed to use more hops (wrt weight) when you use whole hops. Maybe they weren't dried properly, the extra water made your measurement false. When people use fresh hops they use A LOT more than usual. Check with the grower. Your weights seem a little...
