    total honey used was 8 lbs. to 2 gal. of water. So it is 4 lbs. to a gal on the honey. And of course I used a beer yeast with what I've read is a possible attenuation of maybe 12% under perfect conditions. Wonder if that will be enough alcohol to cut through the sweetness?! Guess I'll find out

    Does using distilled water make a difference?

    I need it to cut heavily carbonated water for pale ales. Makes a huge difference. Don't get the harsh hop bitterness. Bicarbonate(?) levels are upwards of 355ppm out the tap along with high overall alkalinity. Tap water works well with stouts and other dark beers.

    With a mash/lauter tun you extract the sugars from grain to collect a sweet liquid that would be equivalent to your LME/DME. Why would one do that...control, over a period of time cheaper, tastes better IMO.
