what's the downside to partial boil (biab)?

It's not all about hop utilization, but that's a major part of it. If you want to, you could calculate how much grain and hops you'd need to use to do a partial boil and add water, but it'd be cheaper just to go out and buy a bigger pot. Also, you'd not be able to go too big because your...

First Upgrade from Basic Starter Set, a few questions

Do you already have a method for fermenting at stable temperatures? If not, I think one of the first things I'd look into is some kind of fermentation chamber. I'm scouring Craigslist every day; it's the next thing on my list.

Toffee flavor in beer? How to create it?

I've been toying around with this idea myself (getting some toffee/caramel flavors, not a Heath bar beer), and everything I've read seems to point to using piloncillo.

Best size BK for 5 gallon brew

+1 to the paint strainer bags. That 15-gallon pot is perfect for BIAB.

    What was your first?

True Brew Amber Ale kit that had been sitting on the shelf at my LHBS for Bob knows how long. It turned out horribly. My second batch was a Brewer's Best Imperial Blonde Ale kit and that came out fantastic. Still one of my favorite kits.

    Un scented soap

I found that my area Dollar General carries a big tub of Sun Oxygen Cleaner for around $4. Check it out.

    Getting ready to bottle?

For cleaning, I use an oxygen cleaner like Oxyclean. Just soak the bottles in hot water and cleaner for a bit. Do you have a bottling wand? The kind with the spring loaded spigot? If so, I recommend using the bottling bucket. If not, I recommend getting one in the near future. I think...

    Worst. IPA. Ever.

Costco's Kirkland IPA. Nasty, nasty stuff. I'm not a big fan of really hoppy beers, but I'm pretty good at putting personal taste aside to tell if something is good or not. That said, I love the hell out of most Yazoo Hops Project beers I've had.

Never brewed - wanting to jump right into all grain

To the OP, ask this question to a 100 different homebrewers and get 100 different answers. Seriously, as someone who is new to all grain and who started with extract and worked my way through partial mash brews, if I had it to do over again, I would have jumped right into all grain. Make...

    First all-grain BIAB success

There's no killin' like overkillin', I s'pose. I see where you're coming from, and still being relatively new to brewing and brand spakin' new to all grain, I have a lot to learn. Essentially, I was aping a process I read here in a post by Deathbrewer about partial mash brewing that I've...

    First all-grain BIAB success

I did my first all-grain BIAB brew on my birthday Jan. 3. It was AHS's smoked porter kit. The only divergence was that used two packs of US-05. My last two batches were partial mash BIAB and because of how well those brew days went, I decided to step up to all-grain. While the entire day was...

Do u think stone is a top 5 brewery in the U.S.?

I don't think I rank beer this way. I look at individual beers rather than breweries. I'm not big on very hoppy beers, so not a lot of Stone beers have appealed to me. That said, I think w00tstout is fantastic.

    Trub bread/sick dog

This is another hops/dogs warning post. I bottled a batch a couple of weeks ago and my girlfriend was interested in keeping the trub in an attempt to bake bread from it. She looked online at several recipes and did her thing. The bread came out smelling great, but had a very bitter flavor -...

Austin Hombrew Supply has a pretty inexpensive piloncillo porter kit you might want to peek at.

Want to brew an ancient Mesopotamian ale

This article from the Smithsonian Magazine about Dogfish Head's Midas Touch might provide some insight. This is the only thing close to what you're talking about I've run across.

    Adding smoke in secondary

Thanks again, everyone. I think I was overthinking this, but it seems like Option 2 is the way to go. Steeping some smoked malt seems like it'll be the easiest and I *do* like the idea of the bragging rights of smoking my own malt. The process of smoking malt is pretty simple actually. If...

    Adding smoke in secondary

PRO TIP! Thank you! Your explanation of steeping smoked malt is almost exactly what I was attempting to convey with my option 2, but far less eloquently. I was thinking about going as far as actually mashing pale malt I smoked myself, but I suppose steeping it would work just as well. If...

    Adding smoke in secondary

Thanks for that tip. If I decide to go this route, I would definitely boil the wort. Yazoo has been smoking their malt with apple, which is what I was planning to do (oak chips smoked with apple, that should be interesting). So I would just buy some pale ale malt and smoke that. Then I'll...

    Adding smoke in secondary

Yeah. I don't like the idea of option 1 at all. I should perhaps clarify Option 3 - I'm only going to soak some of the cubes in whiskey for one batch. The other I would just smoke them. Option 2 seems to be the best idea to me, so far. I think toasting vice smoking is going to impart two...
