    12 Beers of Christmas - 2023 Edition

I will see if someone in my club wants to do a beer.

Is this a Pellicle or Infection?

Hello All, I have a Spiced Cherry Dubbel in the fermenter for Christmas. I split the 10gal batch into two 5gal fermenters after soaking each of them on 5lbs of hand picked cherries. One of the fermenters developed a white-gray film on top. The beer still smells good but do you think this is an...

    12 Beers of Christmas - 2023 Edition

No, would that be the kind of yeast that the beer could sit on for a year? Sounds promising.

    12 Beers of Christmas - 2023 Edition

I transferred off the cherries today. I made 10 gallons because I thought I would lose a lot of volume to the cherries, but they didn't absorb much beer (unlike dry hops). So, I have an extra 5 gallons, I considered pitching a pouch of Roselare Yeast blend on it and putting it away for next year!

    12 Beers of Christmas - 2023 Edition

This cherry pitter has good reviews. Might be worth a shot. Limited-time deal: Ordekcity Cherry Pitter Tool Cherries Corer Pitter Tool Stainless Steel Fruit Pit Remover for Cherry Jam with Lock Design https://a.co/d/9auyeqi I want the cherry “meat” exposed anyway. I might try the sous vide...

    12 Beers of Christmas - 2023 Edition

I think it would work as long as you don't connect all the kegs at once. In other words, don't connect the third keg until the second is full of sanitizer and so on...

    12 Beers of Christmas - 2023 Edition

Today was brew day for the Spiced Cherry Dubbel (aka St Barbara's Cherry Dubbel). I decreased the hops to ~22 IBU because 30 IBU seemed like it might clash with the cinnamon and cherries. I also used Styrian (Celeia) and Saaz on the late side instead of the recommend (Northern Brewer) for 60...

    12 Beers of Christmas - 2023 Edition

shetc, This picture was so helpful. I have been experimenting with some no-oxygen transfers and I really didnt want to connect my CO2 bottle to the top of my fermenter because I can never get the pressure low enough on the regulator. But, I Just looked at how you connect the top of the keg with...

    12 Beers of Christmas - 2023 Edition

Hand-picked some cherries this past weekend for the Spiced Chery Dubbel. I had never seen yellow cherries before, but they are delicious (very sweet). Dark reds are regular sweet cherries and the bright red are sours. Did some Market Research at Jessop's Tavern in Old New Castle, DE (Restaurant...

Sent "Hi Randy, Thanks for your contributions to this great hobby! I am working on a recipe and a label for the your Cherry Spiced Dubbel to participate in the 12 Beers of Christmas 2023 on HomebrewTalk.com. I picked the St Barbara's theme because there is a Belgian/German tradition of cutting...

True dat. Working on label related to St Barbara's Feast Day and the Belgian/German tradition of cutting a cherry branch for the Christmas season starting on Dec 4th. She is also the patron saint of cannons and men that work with explosives.

    12 Beers of Christmas - 2023 Edition

Super excited about making the Spiced Cherry Dubbel! The local orchard has "You Pick" cherries this weekend (sour and sweet). The recipe blows past the Dubbel style guidelines. Randy Mosher says to add "a drop (no more!) of almond extract for extra depth" but does he mean to add one drop per...

    12 Beers of Christmas - 2023 Edition

Fella's, I will take the Spiced Cherry Dubbel. My club is willing to do the Saffron Tripel as a group, but I will let that one ride for a while longer to see if someone else wants to do it. It looks like a nice label is suggested but not entirely required? 1) Caramel Quadruple -...

Old Foghorn Clone Recipe: Which is closest to real thing?

Based on internet research, it appears that there is very little agreement on Old Foghorn's grain bill. Below are listed three fairly reliable recipe sources and they do not agree on whether to use Crystal 40, Crystal 60 or Crystal 80. C40: Anchor Brewing Company: Anchor Old Foghorn (1st...
