    bubbling rate

Sounds good (normal). Relax and have a brew. It will slow down in about a day or two. I typically rack to secondary after about 5-7 days. At that point the airlock is clicking about once every 60 seconds. However, I should add, that I watched my airlock constantly when I first started...

    Air Locks

They work great! For a really active fermentation (all my hefe's) use a blow off tube.

    Observations from my First All-Grain

My sparge typically takes about 30 minutes. I haven't had a bad brew yet, but should I slow my run off and sparge down. 90 minutes...seems like it would just be dripping into the boil kettle.

    shelf life

Does anyone know the shelf life of homebrew? My brew is typically not around long enough for it to be a concern. However, I have a few brews now that I would like to submit in HB contest the first week of Novemeber. Thanks in advance.

Punn, do you have a lauter tun to hold sparge water? From your post it sounds like your set with the 10 gal. mash tun and brew kettle.

Your fridge will hold 6 corny kegs? Good grief that's a big friggin' fridge!

    bottle conditioning

Brewhead, that's my situation as well. I have more beer than I have fridge space for. I tend to brew every other week or so, and can't drink it as fast as I brew it.

    bottle conditioning

After the 2 week bottle conditioning should all the bottles go into the fridge? Or I assume when you find a point that they taste pretty good they should all go into the fridge at that point to halt any further conditioning. Am I correct in my thinking? I have an IPA that has been in a box in...

    CO2 question

I know what you, some those places charge the same for the big tank or smaller tank. I guess they figure it's a flat rate when they hook up the gas line...go figure.

    My first batch

I think twist off bottles would present a problem, JMO. I've only used non twist off bottles. Just keep the bottles in cases of 24, I keep mine in the basment. You'll be ok with temps around 70 degrees. Corona bottles are fine, keep them in the DARK. Clear or Green + light = SKUNK I can...

    My first batch

9 gallons? You're going to need closer to 90 bottles. I typically bottle 48-50 bottles for a 5 gallon batch.
