Lager is so popular due to it's mild but crisp flavor. On average beer drinkers want a lighter tasting beer. Hence lagers being so popular. I'm with you though, I much prefer an ale to a lager.

I have a few large stainless steel mixing bowls with measurements on the inside. The largest bowl is one gallon, I just refill it in the kitchen sink and dump into the stock pot.

I completely agree with you. When I took down my stepmother's maple walnut salmon recipe and served it to a few friends awhile back I didn't try pass it off as my own...even though I'm sure my iteration tasted slightly different than her's. Same goes for beer recipes IMO.
