    Goose Island's Bourbon County Brand Stout is available now. I would recommend picking up a four pack. Also, I don't think anyone has mentioned Revolution. Their Anti Hero IPA is one of my favorites.

    The chilling water never comes into contact with the wort or any tubing that the wort travels through. As for the high heat aspect, most chill to around 100ºF (which, in most cases, happens in under 15 minutes) then switch to the pump, recirculating ice water to get it down to pitching...

    You could just get a small sump pump to recirculate ice water through the chiller. Many on here have used this technique with success and dramatically reduced their chilling time.

    I've had worse siphoning sessions that what you've described here without adverse effects. The beer will probably be just fine.

    Have to jump on the band wagon... To go from making good beer to making great beer, fermentation temperature control is the single most important aspect. Happy yeast make happy brewers.

    +1 I just drape the power and temp probe cords over the side. They aren't big enough to cause any thermal/cooling loss... That being said, if you want a cleaner looking installation, that method should work just fine. You'll just have to rewire your heater.

    dry yeast: how big of starter?

    Dry yeast does not require a starter. Just rehydrate in about 10x the weight in ~100ºF water for 20 min or so before pitching. (eg - 11.5g sachet in 110-115g water). For a bigger beer pitch two sachets.
