    Hi from Illinois

Welcome from South Carolina! I pretty much do exclusively 1 gallon batches. Got started with a Craft-a-brew kit, then began buying recipe books to begin learning more. Most of those have 5 gallon batches, so I just divide by 5. You might have to experiment a bit to get the measurements dialed...

    What are you drinking now?

Test driving the cherry mead I bottled two months ago. Still would greatly benefit from a few more months of aging, but much better than the test I pulled at bottling time. Smooth, can definitely taste the cherry, finishes with a touch of sweetness.

What I did for beer today

Brewed a test 1-gallon batch of pale ale with Comet and Galaxy hops. Hoping to have a new go-to that can join my house IPA. If successful: “Intergalactic Pale Ale”. Might continue brainstorming the name…

South Carolina Pee Dee Brewers (Florence, Hartsville, etc.)

I’ve been brewing for several months now, but I’m not aware of any active homebrewing clubs in my area (Florence County). Posting here to see if there are any other brewers in the Pee Dee region on this forum. Would be awesome to have a club start back up at one of the breweries in Florence or...

    1-Gallon Brewers UNITE!

Cleaned up after a very active Strawberry Wheat. Goofy me didn’t think to use a blow-off tube until post-explosion. Thankfully I brew these small experimental batches in the spare shower we don’t use. Works great in situations like these! 🤣

    Brewing a Wild Fermentation Beer

Thanks to everyone who has answered – this is why I so appreciate this forum. Based on this feedback, I guess my desire is to inoculate with a wild yeast, not to engage in a spontaneous fermentation. I’ll do some additional research in the links @khannon and @cmac62 shared (again, thank you...

    Brewing a Wild Fermentation Beer

Thank you for this clarification: that’s exactly the kind of feedback I was looking for. I didn’t realize the difference between these two terms (again, new brewer here), so your explanation between spontaneous/wild yeast inoculation makes sense.

    Brewing a Wild Fermentation Beer

I posted a similar thread in the general discussion, but ended up getting more feedback critiquing my verbiage and questions than answers. Maybe I posted in the wrong forum; I apologize if so 😆 Going to try and be as clear as possible for anyone willing to offer advice. Please do not respond to...

    Brewing a Spontaneous Beer

I think this is more of what I was looking for. When I referred to “recipe”, I guess I meant something closer to “guidelines” 😆 Kind of hard to call something “spontaneous” if it’s held to strict parameters… The questions I was aiming to answer are more along the lines of what kinds of malts to...

    Brewing a Spontaneous Beer

I’ve been fascinated recently by the concept of brewing a spontaneous (wild?) beer that is inoculated with wild yeast. I’d like to try and get a batch started before the air gets warmer and gunked up. Does anyone have any resources you’d recommend for further research? Possibly even a base wort...

    Sulfur Smell at Bottling Time

I bottled a British Mild a couple days ago that had a sulfuric aroma when I cracked open the fermenter. I went ahead and finished bottling since it actually had a decent taste, but I had a couple of questions to run by y’all: 1. What causes sulfuric aromas in the first place? 2. Do these...

    How Long in Fermenter

That makes sense – thank you! Very helpful. I remember reading somewhere about how yeast “cleans up after itself” once fermentation is wrapping up.

    How Long in Fermenter

What benefits are there to keeping a brew in the fermenter after fermentation has completed? I’ve noticed that some see more of a benefit from bottle aging than others, so curious if there’s a similar benefit from staying in the fermenter for longer.

    Beginner mead brewer

Welcome to the forum! I just started brewing in general, and I quickly found my way over to the mead threads. Any chance you could share that coffeemel recipe? I roast my own coffee, so would love to take a crack at one sometime!

    Preferred Bottles for Mead

What are your preferred bottling methods for mead making? I started brewing beer recently, and had considered bottling mead in the same 12 oz bottles. Well, not with beer in them too, of course… 😉
