    i would go for proper brewers yeast if you can. i did accidently use bakers yest for my blackberry and sole, after an initial fruit and bread smell once the yeast had done its job that smell soon went. i was even surprised by its alcohol tolerance, took my wine up to 12% ( what i was aiming for) !

    I'm certainly hoping it will be a good alternative. there should be no sediment at all seen as you process it just before you bottle it. I'm planning on buying a cheap wine and testing it, I'll keep you posted

    small batches

    thanks everyone, lot of stuff to think about. luckily i work in the grounds of hotel/restaurant/ conference centre so i can get my hands on bottle and buckets, but got to be quick!

    Orientation of stored wine bottles

    i started by storing them upright too and recently opened a 3 year old bottle of cyser. it had only slightly dried out around the top and otherwise was fine. i think it doesn't make too much of a difference specially if you are planning on drinking them quickly

    is there a more precise method to carbonating wine compared to adding a teaspoon of sugar at bottling and hoping? would appreciate and tips and stories that anyone has

    how bad is it?

    i would doubt you'd lose it, i think it takes up to a week before the vinegar 'conversion' happens but it was still a good idea to add the tablet

    going to be doing lots of small batches of wine until i find a recipe I'm happy with....my question is does anyone else out there use 2L plastic bottles to do this? have they performed well?? all thoughts/ ideas welcome

    first true mead XD

    planning on doing 2 1 gallon batches honey brought from supermarket seen as i wanted to make sure i get the process right before splashing out on expensive local stuff not planning on making then into melomels or methelgins unless i get persuaded.... planning on fermenting until dry then back...

    well I'm in northamptonshire if thats any help. just can't seem to find local people or businesses that do. was thinking 1.5kg to start and if its good I'll start doing 3kg
