    Depending on your yeast, (which you may have mentioned the kind/brand and I missed it), personally, I think 63 is a bit on the cold side. I'd let it ramp back up slowish to 68ish. Try to avoid big temp swings up and then back down. As long as you ramp up to 68 and stay somewhere in that range...

    Thanks for the suggestions guys. I went with getting the cap and a 8mm drill tap a I had already purchased the 8mm RTD. The tap was about $8 at HD. Took a good amount of force drilling through the cap and cutting the threads but in the end it worked out well.. Thanks again.
