my tank has read just above the red ever since I had it filled. It's in the keezer so it's going to read a little lower from the get go.

that's a CO2 tank and he's filling the empty space with CO2 when he siphons to keep O2 off the beer.

the pale ale i make with galaxy hops doesn't change much other than mouthfeel. At bottling/kegging I can tell how it's going to taste. The beer still improves with carbing though since the mouthfeel gets better. Most other beers I've made show a lot of improvement after carbing and conditioning...

#2 was good for me when I let it mature enough. It was a scottish ale extract kit and it was good, but the ones I saved for 6+ months ended up very nice. I've been pretty consistent since, just making sure to give the beer time.

i've never had an issue with US-05, but I usually leave it for a minimum of 3 weeks. I don't even check on it, or measure the gravity until then. I'm not sure how quickly it works, but I think it would have dropped a little more after the initial 5 days.

some helpful hints and ideas for me in here. I'm glad to find out that there is black paint that will do the job instead of trying to find a black freezer.
