    Help me design a beer.

I would align with SoCal for the grains. Regarding hops, let's see. Glacier, Pilgrim, Cascade and Willamette.

Brewing in a country with alcohol prohibition

In my country, I would rank homebrewing +/- in the same class as collecting stamps or knitting - a benign pastime for hobbyists. I never considered how it could be a subversive and intense act. Props to DesertFox for making do with what's on hand (condom airlock ftw). I think it's a valuable...

    Gruit - Wormwood problem

So I just brewed this yesterday. In the end I used Musk Yarrow, Southernwood, and a bit of Hallertauer Perle hops. I used those herbs for cold teas in the summer but I wasn't sure how they'd come out in a brew, so I figured a bit of nice hops wouldn't hurt. I forgot about the Wormwood entirely...

What hop combination will get me grapefruit and pine?

Hard to go wrong with your hop mix there. For future reference, I haven't seen Polaris mentioned. I get very intense pine/eucalyptus notes from it. Might be worth a try.

    Gruit - Wormwood problem

Well, I've got some Musk Yarrow and Southernwood. They're much smoother than wormwood, so they'll be my main ingredients, I'm thinking boil and late additions. Plus Woodruff for dry herbing, I guess that's the best use for it. A bit of the wormwood mix for a bit of a twist, but it'll be used...

Has anyone ever messed up a batch??

I've about 20 batches (20L max), and the only batch I tossed so far was a small batch of graf. After bottling, I realized I didn't correctly rinse out the active oxygen detergent/sanitizer granules from the bottling vessel... I found the risk too high, no way I was going to drink or serve...

    Gruit - Wormwood problem

I don't mind absinthe, so I think I'll enjoy wormwood, once I've found a reasonable way to add it. I would imagine plenty brewers did add spices, so don't sweat it, toss it in there! I was thinking about sweet woodruff, that's a nice-smelling plant from around here... Also nettles, on...

    Gruit - Wormwood problem

Yep, that's what I was thinking, get some extra herbs and use the mix like it was just WW. Love to get some Bog Mrytle or Lab Tea, but these are very difficult to find where I live. Wow 3 grams... that 50g pack's going to last me a long time! So you always use WW as a boil/bittering...

    Gruit - Wormwood problem

Take-home message: using wormwood is a big mistake. :D I tasted the 1-hour macerate of the 3-herb tea in water and it was already rather bitter, but still drinkable. I think I might be able to find a way to use this tea still

    Gruit - Wormwood problem

Oh... by "tea" I mean "herb mix", not an infusion. I got a bag of herbs is what. I left a teaspoon in water for 12h and it's quite bitter. Got some nice herb taste too, but really puckering. I'll try a 6 hour maceration next. Adding the macerate/infusion to beer is a good idea, I may try that.

    Gruit - Wormwood problem

I'm planning to try brewing a gruit. I had a local pharmacy make me a tea of herbs: Yarrow, Mugwort and Wormwood, equal parts of each. Unfortunately, turns out I didn't do my homework! I just read that Wormwood is astoundingly bitter and is used in much smaller amounts than the two other herbs...

Favorite 'Subtle' Hop for Light Lager?

No, it's quite terrible, even when fresh.

    Small Mead Aging Time

I've tried a variant of the Fidnemed mead... 1 gallon, half a kg honey, 100g DME, some spices and hops laid into the warm "wort". Notty and a bit of yeast nutrient. It's still rather active after 2 weeks (I can see it bubbling). In 1gal batches, I don't trouble to measure gravity, so I'll just...

    How do you call this?

I guess so. I looked up the definition of "cider" and it's basically any alcoholic beverage from fermented fruit.

    Multi-graf

Just whipped up a small batch of something I might call multi-graf: 1.5L organic 90% apple / 10% pear juice ~1L multifruit juice (mostly apple/orange with like 15% of tropical fruit :( but hey it's something) ~1L beer wort boiled for maybe 15 minutes, with a few pellets of Pilgrim hops @...

    How do you call this?

Just bottled this bad boy. Went from 1.053 to 0.999 in 2.5 weeks. It looks beatiful - nice ligt colour, a tad hazy, which is entirely expected. Smells like old apples and pineapple, very lovely. Taste is quite sour, but once the palate gets used to it, you do get a bit of fruit flavour. I...

    Pasteurized juice & Hard cider

I don't know, was a bit surprised too. Anyway, it's true that my brew usually don't hang around long enough to overage.

    Pasteurized juice & Hard cider

I read on thread https://www.homebrewtalk.com/showthread.php?t=83060 that cider from pasteurised juice doesn't keep well... can anyone confirm that?

Sorry, just assumed it would be yours. I do thank you for the tip.

    Small Mead Aging Time

Awesome thanks for the recipes! I think I'll spend some time on your website :D OK, I'll keep that in mind and throw in some stuff to spice things up.
