    [QUOT I can't say no to a smoked Swiss or smoked Gouda either. I love smoked cheese and smoked gouda in particular Last weekend, I smoked a couple blocks of american cheddar. Had a hard time getting it lit, lol.

    The site is only a blog more or less. All the discussion takes place on our e-mail list, and it is quite lively, so a dedicated G-Mail account or the like is suggested as the volume of e-mails could be overwhelming.

    Lager Question

    If you have finished your brew and are ready to lager, you can add the sugar you are using to prime with and let the beer carbonate in a warm place. When carbonation has been achieved, you can then lager your brew. You can also lager it first and then remove to a warm place and carbonate it then.

    Yeah, I understand your situation, but also keeping it at the proper temperature for the yeast used makes a lot of difference.

    Looking at the dimple on the plastic of the handle which shows the gas in side, I would say it is a ball lock. Pin locks have different QDs, so no need to mark the plastic top. I know ball locks do also, but the pin locks pins make it impossible to switch QD's where as a ball lock CAN fit over...

    I use a beer gun and never have issues with oxygenation of my beer. I pre purge before filling and when I am removing the wand, I give it another blast to top off the bottle just in case.

    All instructions are simple suggestions. You really have to let the beer finish on its own timetable. Never cap a beer that hasn't finished fermenting.

    Fresh frozen hops?

    A guy on my mailing list uses fresh frozen hops all the time and when I questioned him about it said he finds them just as good as if there were just picked. All the literature I have read on it specifies that they be dried before frozen. I have never tried any of his brews, so I can't say...
