    New to Lambic...

Thanks a ton. Will hopefully be making one this weekend. In the meantime...it looks as though I have to stock up the cellar with...research...and more carboys. Does ferm temp matter as much with Lambics and sours? or is it one of those "avoid the extremes" kind of things? And how/when would I...

    New to Lambic...

Thanks for the quick reply. Here are a few more if your up for it... Will the oak stand out a lot? What dregs would you recommend(I know some aren't meant for reuse)? Did you pitch the Lambic blend, roselare and brett at the same time?

    Home Draught keg reuse?

Well, I've been letting it condition normally, then when I install the new co2, i let a little of the co2 from conditioning out...not all of it, just enough to make the bottle a little flexy. Then pop on the co2 and set it in the fridge. I don't think that a little co2 cartridge has enough...

    Home Draught keg reuse?

    New to Lambic...

hey there, been lookin at a few recipes, I think I'm going to brew one next. I just have a few n00b questions first... 1. Just to be clear, I would make a traditional belgian, pitch regular yeast, then pitch the bugs after primary has ended? 2. Lambic styles have a relatively normal abv, if I...

    Home Draught keg reuse?

there are a few threads on this. it does work. i have an empty one myself waiting for beer. all you do is empty it (as painful as it might be), unscrew the co2 cartridge, fill it when you bottle, let it carb naturally. then when ready to drink, purge it slightly, not completely, then replace...

How many batches have you ruined and how??

drank 8 Red Hook Long Hammers then steeped grains at about 190 for 15 minutes...forgot the hop schedule, pitched too high and fermented hot. Learned my lesson...
