Monday Morning Quarterbacking my Christmas beers

I actually like this uncle though... I let it slide this time since he was trying to give honest feedback without much knowledge. Now my father in law who called the spiced holiday ale too dark on the other hand...

Monday Morning Quarterbacking my Christmas beers

Since it was a NB extract kit, the spices came "pre-measured". Instructions stated to dump in and then flame out. I say "pre-measured" as there could have been less of one item and more of another. I think the mix NB uses is orange peel, coriander, clove, star anise, and maybe a little bit of...

Monday Morning Quarterbacking my Christmas beers

I used only Distilled water. Never tap, or RO. My cleaning regimen involves PBW and Star San, which takes about two days for me to complete with drying and work.

Monday Morning Quarterbacking my Christmas beers

It wasn't that it bothered me since this is my 6th or 7th batch overall, it bothered them since I was taking time to pour carefully into the glass. I was thinking ways of making it easier on them. From what I've read hear, bottling will always have a small amount regardless of the methods you use.

Monday Morning Quarterbacking my Christmas beers

I'm throwing this into the Beginners Forum since I think that a lot of the feedback will be helpful to many just starting out. This year, I made 2 small batches (1 gallon) for my in-laws Christmas Eve party/get-together/listen to screaming kids event. Just something to get a few of us through...

Do You Buy From Northern Brewer?

So I have been using NB for the last 2 years. Before that, I used Monster Brew and a LHBS (one in Fredericksburg, MD and one in San Antonio when I lived in those cities). When I moved to the DFW area, it seemed that the nearest options were over 30 minutes away or were closed permanently. Add...

    Fun with kids..

I always thought it was the hop pellets/whole hops that caused it. I purchased calming treats for my dog and right there in the ingredients was hops. Processing hops may make them safe for consumption somehow? Sorry to take that side street. I can't say I've tried hop pellets or whole hops...

    Brewery names--what's your story?

So my intent is to name my efforts Tongues Out Brewing Co. So far it's not claimed as far as I could tell. My 12 year old boxer has a tooth that sticks out to the right, and his tongue can usually be found hanging out the side. Not sure what happened or if he was born that way, but when we...

Spiced Winter Ale almost Finished in Only 2 days?! London Ale - 72-75F

Is this the Festivus Miracle? I did the one gallon batch and have it in bottles now. Should be conditioned by this weekend.

    BeerShed Ceiling insulation

Got it! Couldn't tell from the photos how you got power in there. I was thinking about suggesting exactly what SanPancho did, but recently had to tear out laminate flooring I had recently installed due to the overflow pan on my AC unit not draining correctly, running down a wall, and...

    BeerShed Ceiling insulation

I second this. Not knowing if you are electric or using a gas burner, I'd spend the money on mechanical ventilation to help keep air moving and not putting yourself at risk for carbon monoxide. This too. Or go the closed cell foam route. I'd also check the wiring to the lights. I can't...

Making the jump to 3-gallon from 1-gallon

Not trying to get too off topic, but while shopping around yesterday I found that Ss Brewtech has a brewing system buyer's guide PDF that starts at 3 gallons and goes all the way to 15 gallons. While it is their equipment listed, one could use this as a guide for what sizes needed for...

    Beer Courses?

Like FatDragon and myndflyte said, most likely no. Looking at the costs, that money is better spent on ingredients, equipment, and literature. If this is giving you an inside look at the industry and going in-depth into the chemistry of beer, then by all means do it. Most 4 year programs...

Interesting note on Auto Siphons and Cleaning...

I've heard some posters here won't do Northern Brewer anymore and I am thinking QC might be why. That said, they did send me a replacement at no cost. They pulled my order history and since I was only a few months in, they sent a replacement. I probably wont soak it in PBW as much; probably...

    What are you drinking now?

Not drinking it now, but had my Chinhook IPA I brewed a while back. Plenty hoppy even with a few extra weeks conditioning and in the fridge. Bonus: wife actually likes it! EDIT: Drank this Saturday and Sunday

    Top it off?

I personally would not top off. I just bottled a 1 gallon batch of Festivus Miracle that was substantially less because I decided to transfer to secondary to help clear it (I NOW know secondary is not worth it). I scaled back my priming sugar stolen from a 5 gallon kit that had been sitting...

Interesting note on Auto Siphons and Cleaning...

It was actually blue, which is how I was able to tell the rubber was deteriorating. It is Northern Brewer's in house model.

Interesting note on Auto Siphons and Cleaning...

Almost anything stainless has a premium these days (I deal with a lot of it in my day job as a construction estimator). But good to hear it's worry free. I will look into one as I start to upgrade my system.

    steeping with caution

Just to throw this in the mix, would doing an overnight steep help alleviate the concern? I saw a post in here about that, and thought I'd try it on an extract I did. I used distilled water and let it sit overnight at room temp (68-72 F, can't recall exact temps). My beer is sitting in...
