    Heavily leaning towards the freezer/fridge option for a fermentation chamber. I'm hoping to convince the wife into getting a new fridge and using the perfectly good older one as a fermentation chamber and storage for bottles, including the one off bottles I was gifted for Christmas.

    Good point. Was going to go the used route on a chest freezer before I posted, yet it seems they are harder to come by on Craigslist. I’m live in a small town on Lake Lewisville called Hickory Creek. First exit off I35 once you cross the lake heading north. Been looking for a LHBS around here...

I have decided to go back to 5 gallon extract batches this year from the 1 gallon batches I have been doing. I have the gear for it (just need to replace my 6.5 gallon bucket) and could do it tomorrow...

    Everything @IslandLizard said. I always rehearse, usually with StarSan, prior to the transfer to the bottling bucket. Not only can you iron out the kinks in your process, you also just sanitized everything you need to bottle! Another process to consider in the future, which you will see...

    Some will say yes, others no. I say leave it where it is. Worst case, it isn't 100% what you wanted and you try again with different techniques. Keep in mind, you still need some yeast for carbonating if bottling.

    The general consensus is that secondary fermenters are not necessary for 95% of what you brew. The few types that require dry hopping may benefit from it but you still risk contamination/oxygenation. If you are looking to clear up your beer, whirl-pooling before transferring to the fermenter...

    What kind of water did y'all use in the barrel? I've read somewhere (I think on a comment for a barrel for sale online) that you shouldn't use water directly from the tap. Something to do with chlorine affecting the wood adversely.

    I went from 5 gallon to 1 gallon to save fridge space, since I don't have a dedicated beer fridge or keezer (yet...). I think the NB kits are great to learn on. I've done 4 (Cream Ale, Chinook, Brickwarmer, and Festivus) with 1 more waiting (Caribou Slobber). My two cents is to keep going...
